Additional Information
Abbey Copenhaver, MS, RDN, CDN, is a registered dietitian, dairy farmer and “ag” foodie. Priding herself with a dairy farm upbringing in a large family, Abbey now farms with her husband and three other families on two dairy farms in the Finger Lakes region of New York. She is the owner of Farmstead Nutrition & Consulting, focusing on agricultural food production, family nutrition and teaches at Finger Lakes Community College’s as a part of their two-year Nutritional Science program.
Abbey’s culinary interest started at a young age, cooking for her large family with a fascination on the farm to table experience when producing milk and using it in recipes. Incorporating her love for cooking while serving families as a registered dietitian, Abbey has developed a unique talent for creating easy, delicious and nutritious recipes that are adaptable to all ages. Her love and hands-on experience in all things dairy, paired with dairy’s versatility, nutritional profile and affordability has led to many dairy featured recipes. On Abbey’s social platforms she has been christened the “Dairy Farmer RD.” She has collaborated with numerous organizations on nutritional blogs, presentations and events that focus on food production and nutrition through food for healthy living. Abbey practices with a farming, food and fitness approach. As a registered dietitian and foodie, she believes food should fuel your body and taste buds.
Abbey earned a bachelor’s degree in animal sciences from Cornell University and a bachelor’s degree in human nutrition and dietetics from Buffalo State College. She went on to receive a master’s degree in agriculture food science and management from Washington State University. As a dairy farmer, registered dietitian, and mom, she's proud to be a part of milk’s cow-to-consumer story and dairy’s nutritional impact on health for all stages of life.

Megan Maisano, MS, RDN, is a Registered Dietitian Nutritionist and the Director of Nutrition and Regulatory Affairs at National Dairy Council. She holds a BS in Psychology from the United States Military Academy at West Point, an MS in Nutrition Interventions, Communication and Behavior Change from the Friedman School of Nutrition at Tufts University and completed her dietetic internship at the Cleveland Clinic.
At National Dairy Council, Megan provides regulatory and scientific guidance to support dairy-related communications, strategic outreach and education. Her professional interests include science translation and health behavior change, and she enjoys busting food and nutrition myths for fun. As a health educator, she believes wellness is deeply personal and should help us feel nourished and empowered, never restricted or discouraged.

Dr. Stephanie Masiello Schuette is a multi-disciplined scientist with a background in disease surveillance, dairy science, food science, epidemiology, and communication methodology. She completed her Masters degree in Dairy Science from Virginia Tech and her PhD in Dairy Food Safety from Cornell University. After four years at the Chicago Department of Public Health as a Division Director in Infectious Disease, Dr. Masiello Schuette returned to dairy and joined DMI. Her current role is as the Director of Environmental Research, where she works to enable transformative options to address the environmental impact of dairy production. Dr. Masiello Schuette has a deep passion for communicating science-based information to diverse audiences.
