The Raw Vegan Diet
This continuing education course examines the risks and benefits of a raw vegan diet and provides dietary guidelines and recommendations for creating a raw vegan meal plan for a healthy adult.
Learning Objectives
After completing this continuing education course, nutrition professionals should be better able to:
- Differentiate between types of raw diets—fruitarian, living foods, and nonvegetarian.
- Assess potential health benefits and risks associated with following a raw vegan diet including food safety and challenges to adherence to the diet.
- Identify clients for whom a raw vegan diet may be appropriate and create meal plans to meet their nutritional needs.
