Additional Information
Kristen Hicks-Roof, PhD, RDN, LDN, CLC, FAND, is a Registered Dietitian and an Assistant Professor in the Department of Nutrition and Dietetics at the University of North Florida. Her major research interests surround program development and evaluation. She has two major programs which encompass interprofessional education and mentoring in dietetics. Her aim is to increase professionalism within the dietitian community and across healthcare while providing hands-on nutrition experiences for students, with expectations to open opportunities post-graduation (such as dietetic internship match, graduate studies etc.).
Dr. Hicks-Roof is active within many professional communities being awarded the Registered Young Dietitian of the Year of Texas in 2016, presented her research at over 50 invited and professional presentations and published articles and media. Dr. Hicks-Roof is one of the presenters with her expertise of mentoring and professional advancement within the dietetics communities.

Dr. Catherine Coccia is an RD and Associate Professor in the Department of Dietetics and Nutrition at Florida International University (FIU). She is also the Doctoral Program director in the Department of Dietetics and Nutrition at FIU. Dr. Her research combines basic science in child health and evaluation of community-based programs to increase health related outcomes in diverse populations. She has received funding for her research examining the role that schools and parents play on the health behaviors of children, adolescents and emerging adults and has contributed to the development of several community-based interventions for diverse populations.
Dr. Coccia is an active member of the Academy of Nutrition and Dietetics and the Society for Nutrition Education and Behavior. Through her formal roles at the university and informal roles through professional organizations, Catherine is committed to mentoring students of all levels to a successful career within the field of dietetics and nutrition.
