This continuing education course summarizes the current evidence about the health effects of different fats and oils and provides RDs with guidance about how to advise clients/patients about fats and oils.

Learning Objectives

After completing this continuing education course, nutrition professionals should be better able to:

  1. State the fatty acid composition of common fats and oils.
  2. Explain the current recommendations for total fat, saturated, monounsaturated, and polyunsaturated fat intake.
  3. Identify fats and oils for which there’s general agreement about a beneficial or adverse effect on intermediate markers of cardiometabolic health and cardiovascular endpoints.
  4. Identify fats and oils for which there’s insufficient evidence or uncertainty about the effect on intermediate markers of cardiometabolic health and cardiovascular endpoints.
  5. Discuss nutritional and functional components of fats and oils beyond the fatty acid composition.
