Choosing Healthful Oils
This continuing education course summarizes the current evidence about the health effects of different fats and oils and provides RDs with guidance about how to advise clients/patients about fats and oils.
Learning Objectives
After completing this continuing education course, nutrition professionals should be better able to:
- State the fatty acid composition of common fats and oils.
- Explain the current recommendations for total fat, saturated, monounsaturated, and polyunsaturated fat intake.
- Identify fats and oils for which there’s general agreement about a beneficial or adverse effect on intermediate markers of cardiometabolic health and cardiovascular endpoints.
- Identify fats and oils for which there’s insufficient evidence or uncertainty about the effect on intermediate markers of cardiometabolic health and cardiovascular endpoints.
- Discuss nutritional and functional components of fats and oils beyond the fatty acid composition.
