Recorded Symposium Session: What is the ME in Mentoring?
The thought of mentoring may be exciting, nerve-wracking, or confusing. You may be asking, ‘what’s the purpose? Is it going to take up a lot of my time? Ultimately, is it worth it?’ Karen Beathard and Kristen Hicks-Roof will discuss the “ME” in Mentoring: the reciprocal benefits of participating in a mentoring program and its value to the dietetic profession. They will jump into the roles of the mentor and mentee and provide guidelines and tips for a successful mentoring relationship. They will discuss the research model, the RD Mentorship Program, and how it has shown success over the past five years. Participants will leave the session with an understanding of the role and value of being a mentor, along with the tools and resources to participate in a productive mentoring relationship.

Additional Information
Karen Beathard, MS, RD, LD, FAND, is a Senior Lecturer and Didactic Program Director at in the Department of Nutrition at Texas A&M University and is a professional mentor and role model to students and entry-level practitioners. She has a BS in Food Science Technology, a MS in Nutrition and completed her dietetic internship at the Michael DeBakey Veteran Affair Hospital in Houston. Currently, she is a doctoral candidate in Human Nutrition at Texas A&M researching the RD Mentor Program and the relationship between eggs and cognitive performance in older adults. Karen’s industry experience is in food service management, clinical dietetics and private consultation. She co-advises the Texas Student Dietetic Association, served in the Academy of Nutrition and Dietetics House of Delegates, and held leadership positions in the Texas Academy of Nutrition and Dietetics and Foundation.

Kristen Hicks-Roof, PhD, RDN, LDN, CLC, FAND, is an Assistant Professor in the Department of Nutrition and Dietetics at the University of North Florida (UNF). Her research interest is focused on developing and analyzing the impact of online nutrition education courses for healthcare professionals. She is passionate about improving communication between practitioner and patient by providing easily accessible online educational offerings. She has developed partnerships with both the Texas Medical Association and the Florida Medical Association to disseminate educational offerings. Kristen also focuses on mentoring within dietetics as part of her research initiative. She has implemented an RD mentorship program for UNF students, with hopes to expand this across the state of Florida. She is published in peer-reviewed journals and presented at scientific conferences nationwide.
